你知道嗎？【泰式炒河粉與國族主義】

大家好，又到了Mr Holiday時間。

在寫作的此時此刻，Mr Holiday正在泰國旅行，所以這週寫跟泰國有關的冷知識。
Mr Holiday在英國唸書的時候，偶爾會去泰國餐廳吃飯，一定會點Pad Thai（泰式炒河粉）。但是這次來泰國之後，我就在想為什麼Pad Thai要叫Pad Thai？而且Thai這個結尾跟泰國（Thailand）那麼像，其中會不會有什麼關聯呢？
1938年到1957年間，泰國獨裁首相鑾披汶．頌堪(Plaek Phibunsongkhram)，想要讓泰國成為一個進步的西式國家，由於泰國是稻米大國，所以他的腦筋就先動到稻米上面。思考如何可以增加稻米的需求，並建立起國家主義。
當時麵條多用麵粉做的，但是泰國本身不產小麥，這代表必須仰賴進口，於是首相開始推廣用米做成的米粉或是河粉，來取代麵條，這樣可以增加稻米的需求。
再來就是建立國家主義的部分。從原本的暹羅(Siam)改名為泰國(Thailand)，米製的河粉也就擔負起新國家主義的重任。Pad在泰文是翻炒的意思，Pad Thai也就是泰式炒的意思，既然是政府重點推廣的東西，這道菜也就把國家的新國名帶在身上。在原料的部分，政府的版本是以海鮮跟魚露為材料，避免使用豬肉，因為豬肉（或是豬肉做成的叉燒）被認為是中國料理的材料，既然要建立國族主義，就要盡可能的去除外國的連結。
最後，Mr Holiday想要總結兩件事情：
一、Pad Thai在英國就叫做Pad Thai，所以到泰國跟店家說Pad Thai，人家知道我要點什麼。如果我只知道中文「炒河粉」的話，來泰國完全點不了菜啊！論保留食物原名的重要性！
二、沒想到國族主義還可以動腦筋到食物上面，佩服佩服！而且還很好吃啊，佩服得心服口服。
